The
Chicago commissary opened in 1955, and its primary
function was to supply restaurants around Chicago
and in the Middlewest. Built with an option to
expand, initially the facility served as an ice
cream plant and warehouse. The commissary was
described as featuring the "latest machinery
for the modern production of ice cream." |

Round |

|
The
Ground Round concept was devised by Frank Barrett
and Gordon Smith. The restaurants were themed
to be "simple, but solid, [with the] look
of early Americana reinforced by red-checkered
tablecloths, lots of beautiful wood, a huge fireplace
that works, a jukebox, and peanut shells on the
floor." The prototype was in Norridge, a
converted circa 1954 HoJo's and began operating
in 1969. |

Initially
opened March 3, 1970 as a Red Coach Grill, the
unit was located in "Executive Plaza between
two dramatically modern office towers." As
a Red Coach, the restaurant seated 275 and offered
a Tally Ho cocktail lounge. Performing poorly,
in 1975 it was converted into an experiential
concept called P.J. Brennan's. The Brennan family
was closely associated with the Johnson's and
Howard B. received his middle name from that association. |
